Summer wine
“Icy-cold dessert wine is stained lipstick red by summer's berries.”
Ingredients
  • 100g raspberries
  • 750ml sweet dessert wine
  • a dash of Cointreau or berry liqueur
  • extra raspberries and bamboo skewers, to serve

Method

Whiz 100g raspberries to a puree and push through a fine sieve with the back of a wooden spoon.

Add the puree to 750ml sweet dessert wine, adding a dash of Cointreau or berry liqueur to sweeten
to taste.

Serve well-chilled or with loads of ice, with swizzle sticks of raspberries threaded into
bamboo skewers.
