Seared yellowfin tuna with soba noodle salad and wasabi
Ingredients
  • 300g yellowfin tuna, high grade
  • 1/2 cup sesame seeds
  • 1 tbsp vegetable oil
  • 1/2 packet soba noodles
  • 2 tbsp sesame oil
  • 1 cup bean sprouts
  • 4 red chillies, julienned
  • 1/2 cup coriander leaves, chopped
  • 4 tbsp soy sauce
  • Wasabi
  • Aioli

Method 

Roll tuna in sesame seeds and press to coat well. Heat oil in a pan and very quickly sear tuna on all sides. Set aside to cool before refrigerating in an airtight container. Boil noodles in salted water for five minutes or until cooked. Remove and refresh in cold water. In a large bowl, toss noodles with sesame oil. Add bean sprouts, coriander, chilli and soy sauce and mix through. Thinly slice tuna and serve with noodles and dollops of wasabi and aioli.
