Quick chocolate mousse with summer berries
- 250g dark chocolate (chopped)
- 2 eggs (lightly beaten)
- 200ml pouring cream (lightly whipped)
- 2 tsp vanilla extract
- 4 x 150ml dishes
- 1 punnet blueberries
- 1 punnet raspberries
- 1 punnet strawberries (halved)
A quick recipe with dark chocolate
Method
Melt 250g dark chocolate (chopped) in a bowl over a pot of simmering water (or in the microwave), then remove from heat and stir in 2 eggs (lightly beaten). Add 200ml pouring cream (lightly whipped) and 2 tsp vanilla extract and stir until smooth. Divide mixture evenly between 4 x 150ml dishes and refrigerate until firm. Combine 1 punnet blueberries, 1 punnet raspberries and 1 punnet strawberries (halved) in a medium bowl. To serve, divide berries between plates, sprinkle with icing sugar and accompany with mousse pots.
