Papaya wedges with smashed raspberry and lime syrup
Ingredients
  • 2/3 cup castor sugar
  • Thin strips of rind from 1 lime
  • 125g raspberries
  • 1 tbsp lime juice
  • 1 tbsp brandy
  • 2 ripe papayas, peeled and cut into thin wedges

Method

Combine sugar, lime rind and 1/2 cup water in a small saucepan and stir over medium heat until sugar dissolves. Bring to the boil and simmer for six to nine minutes until syrupy. Remove from heat and cool slightly. Place raspberries in a bowl and crush lightly with a fork, add lime juice and brandy and stir. Add syrup, stir and refrigerate for 30 minutes. Place papaya in four shallow serving bowls or plates and spoon over smashed raspberry syrup.
