Kiwi fruit and blueberries with marsala sauce
Ingredients
  • 4 egg yolks
  • 110g caster sugar
  • 1/2 cup sweet marsala
  • 1/4 cup water
  • 3 green kiwi fruit, peeled and cut into 1cm pieces
  • 3 gold kiwi fruit, peeled and cut into 1cm pieces
  • 1 punnet blueberries

Use kiwi fruit in breakfast drinks such as smoothies and to decorate fruit tarts.

Method 

For sauce, beat egg yolks with sugar in the top half of a double boiler or in a bowl over a saucepan of simmering water. Add marsala and water and cook, stirring constantly, until thick and foamy. Remove from heat.
Divide kiwi fruit and blueberries evenly between four shallow bowls. Spoon sauce to the side of fruit.

Serves 4
