Granola and dried fruit compote
- 100g prunes
- 150g caster sugar
- 350ml water
- 100g dried apricots
- 4 dried pears, cut in half
- 1 cinnamon stick
- 1/2 lemon rind
- 2 cups oats
- 1 cup flaked almonds
- 1/3 cup macadamia nuts, roughly chopped
- 1/3 cup hazelnuts, roughly chopped
- 1/2 cup sultanas
- 1 tbsp mixed spice
- 1/3 cup honey
- 1 1/2 tbsp vegetable oil or canola oil spray
Prepare granola and compote the day before - unless you and the kids want to get up at the crack of dawn. Keep granola in an airtight container and fruit in the fridge for a couple of weeks.
Method
Place prunes in a bowl and cover with boiling water. Allow to cool and then cover and place in the fridge. Bring sugar and water to the boil, add apricots, pears, cinnamon and lemon rind. Simmer for 10 minutes and allow to cool. Store in the fridge. Pre-heat oven to 150C. Mix together oats, nuts, sultanas, spice and honey in a bowl. Place in a baking tray and drizzle with oil or spray evenly with canola oil to just cover. Bake in the oven for approx 30 minutes, stirring at 10 minute intervals until golden and toasted. Allow to cool and then serve with fruit compote, yoghurt and milk.
