Flaming ginger and lemon pina colada I scream

- 3 parts Mount Gay Eclipse Rum
- 2 parts cream
- 1 part lemon juice
- 1 part ginger syrup
- 2 parts coconut syrup
- 1 dash lemon bitters
Cocktail bars have gone all serious. They were once the domain of letting your hair down and drinking wacky concoctions but now you're more likely to find Sydney bartenders wearing braces and bow ties, doling out drinks that are heavy on alcohol but light on fun.
Method
Blend quickly and garnish with a flaming frozen sugar-coated lime shell filled with rum (home bartenders take care).
