Bircher muesli
Ingredients
  • ¹/³ cup rolled oats
  • 200ml milk
  • 2 heaped tbsp honey
  • 30g sultanas
  • ¹/³ cup natural yoghurt
  • 40g hazelnuts, roasted to remove skins and chopped
  • 1 small poached quince (see Five Facts, opposite), diced
  • juice 1 lemon
  • 2 granny smith apples, unpeeled and grated

Tasty and nutritious, apples can form the core of some really great dishes.

Method 

Soak the oats in the milk and let stand for at least one hour. Combine with the other ingredients and leave overnight in the fridge before using.
