Sweet red chilli with mango and vanilla ice-cream

Ingredients
  • 2 long red chillies (seeded and very thinly sliced
  • 1/2 cup caster sugar
  • 300ml water
  • juice of 1/2 lemon
  • 2 large ripe mangoes (or drain 2 x 425g cans sliced mango)

An exotic after dinner treat.

Method

In a saucepan, place 2 long red chillies (seeded and very thinly sliced), 1/2 cup caster sugar, 300ml water
and juice of 1/2 lemon. Bring to the boil over medium heat, then simmer gently for 20 minutes or until syrupy. Transfer to a bowl and refrigerate.

Peel and slice 2 large ripe mangoes (or drain 2 x 425g cans sliced mango) and arrange on serving plates.

Spoon over the sweet red chilli syrup and serve with a scoop of vanilla ice-cream.
