Stir-fried prawns with ginger and green onions

Ingredients
  • 3 tbsp vegetable oil
  • 16 large green king prawns (peeled)
  • 4 green onions (finely sliced)
  • 1 tbsp fresh ginger (grated)
  • 1/2 cup chicken or vegetable stock
  • 2 tbsp brown sugar
  • 1 small red chilli (sliced)
  • sea salt
  • coriander leaves
  • rice

Try this quick and easy prawn recipe.

Method

Heat 3 tbsp vegetable oil in a wok over medium heat until hot.

Add 16 large green king prawns (peeled). Cook until they just change colour, then remove and set aside.
Reduce heat to low.

Add 4 green onions (finely sliced) and 1 tbsp fresh ginger (grated) and stir-fry until aromatic.
Add 1/2 cup chicken or vegetable stock, 2 tbsp brown sugar, 1 small red chilli (sliced) and sea salt to taste. Return prawns to wok and stir to coat with sauce.

To serve 

Serve topped with coriander leaves and accompanied by steamed rice.
