Ingredients
  • 1 cup strawberries, stems removed
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 cup sparkling Ribena or cranberry juice
  • 1 cup coconut milk or yoghurt
  • 1 cup crushed ice

The summer party season can too easily slip past in a blur. To keep guests standing until the end, I make a non-alcoholic-based drink that helps the kids run a little faster and still lends itself to the addition of equal parts of cherry vodka and, say, maybe peach schnapps, for adults who need that extra bit of oomph.

Method


Place all the berries into a food processor and whiz for a minute. Pour in the cranberry juice or Ribena and the coconut milk and blend until really smooth.

Take out those stunning frosty glasses, add a small mountain of crushed ice, pour over the berry mix and sip ever so delicately.
