Pineapple and melon salsa

Ingredients
  • 1 cup fresh pineapple, diced
  • 1 cup fresh cantaloupe, watermelon or papaya, diced
  • 1 cup cucumber, peeled, seeded and diced
  • 1 cup red capsicum, seeded and diced
  • ½ small chilli pepper, finely sliced
  • ½ tsp sea salt
  • 3 tbsp lime juice
  • 3 tbsp coriander, chopped roughly

Method

In a large bowl, combine the pineapple, melon, cucumber, capsicum, chilli, sea salt, lime juice and fresh coriander.

Toss and chill for up to two hours.
