Pineapple and melon salsa

- 1 cup fresh pineapple, diced
- 1 cup fresh cantaloupe, watermelon or papaya, diced
- 1 cup cucumber, peeled, seeded and diced
- 1 cup red capsicum, seeded and diced
- ½ small chilli pepper, finely sliced
- ½ tsp sea salt
- 3 tbsp lime juice
- 3 tbsp coriander, chopped roughly
Exotic, zesty and refreshing. Stunning over scallops or rich, oily fish.Is it a condiment, sauce or dip?
Method
In a large bowl, combine the pineapple, melon, cucumber, capsicum, chilli, sea salt, lime juice and fresh coriander.
Toss and chill for up to two hours.
