Pear, rocket and walnut salad
“Forget the recipe ­- Anastasia Spillane goes with the flow to create tasty, unpredictable meals.”
Ingredients
  • 1 pear, finely sliced
  • 1 bunch of rocket
  • 1 bunch of baby spinach
  • 1/2 cup of shaved parmesan, to taste (Spillane recommends a strong romano)
  • Dressing:
  • 1 tbsp mango chutney
  • 2 cloves crushed garlic
  • 1/2 tbsp wholegrain mustard
  • 1 tbsp balsamic vinegar
  • ¼ cup olive oil
  • 1 handful of chopped walnuts
  • Pinch of salt and cracked pepper, to taste

Our Homecook hero, Anastasia Spillane breaks the mould of "domestic goddess". A self-described "frumpy mum", she has a shoulder-to-elbow tattoo, a love of craft and an aversion to recipes.

Method 

Combine pear and salad leaves in a bowl. Combine dressing ingredients in a separate bowl and mix well. Pour dressing over salad and top with shaved parmesan.

To Serve 

Serve with grilled fish or steak.
