Grappa cherries

- 660g caster sugar
- 560mL water
- 1kg cherries
- 750mL grappa
Show off your cooking talents with these delicious suggestions, which can be dressed up with pretty ribbons, paper and boxes in the spirit of the season. The peach and thyme vinegar and the grappa cherries should be made well ahead, allowing time for the flavours to develop.
Method
Combine sugar and water in a large saucepan and stir over medium heat until sugar dissolves, then bring to the boil for 5 minutes. Cool.
Remove stems from cherries, then wash and pat dry with absorbent paper. Place cherries in a 2L sterilised jar, then fill jar with equal amounts of sugar syrup and grappa to cover cherries. Seal and store in a cool dark place for up to 2 months. When opened, cherries will keep in the refrigerator for up to 2 months.
To serve
Serve cherries as a condiment with roast duck, guinea fowl or cold meats.
Makes 2 litres.
