Carob brownies
“Great alternative to chocolate”
- 1/2 cup ghee or vegetable oil
- 1 cup water
- 23 cup carob powder
- 1 tbsp instant coffee substitute (optional)
- 1 1/2 cups maple syrup
- 1 tsp vanilla extract
- 1/2 tsp orange zest
- 2 cups unbleached white flour
- 21/2 tsp baking powder
- pinch of salt
- 23 cup walnuts, chopped
Beginners may take a few bites to warm to carob, but those already addicted won't need persuading.
Method
Preheat the oven to 180C. In a small pot melt the ghee with the water.
Sift in the carob powder and coffee substitute, if using, then allow to cool. Stir in the maple syrup, vanilla extract and orange zest. Set aside.
In a large bowl whisk together the flour, baking powder and salt. Toss in the walnuts. Pour in the wet ingredients and combine thoroughly.
Pour the mixture into an oiled 20 cm x 30 cm cake tin. Bake for 35 to 40 minutes or until knife comes out clean. Allow to cool before going ape.
