Bruschetta

  • slices of bread
  • garlic clove

Topping

  • 1 slice hot or mild pancetta
  • 3-4 fresh sage leaves
  • 1 tbsp extra virgin olive oil

Method

For bruschetta

Cut thick slices from a substantial loaf and toast on a barbecue. Rub lightly with a cut clove of garlic.

For topping

Top grilled slice of bread with pancetta and sage leaves. Drizzle all over with olive oil and grill until pancetta bubbles and is crisp at the edges and sage leaves are also crisp.
